Instructions
- Prep Chicken: Season chicken pieces with salt, pepper, garlic powder, and smoked paprika. Let sit for 10 minutes while you prepare other ingredients and heat your pan.
- Cook Rice: Rinse jasmine rice until water runs clear, then combine with chicken broth in a pot. Bring to boil, reduce heat, cover and simmer 18 minutes.
- Sear Chicken: Heat oil in large skillet over medium-high heat. Add seasoned chicken and cook 5-6 minutes until golden brown and cooked through, stirring occasionally.
- Make Sauce: Whisk together honey, buffalo sauce, minced garlic, soy sauce, rice vinegar, and cornstarch until smooth. This creates your sticky coating base.
- Add Aromatics: Add diced onion to chicken and cook 3 minutes until softened. The onion should be tender but still have a slight bite to it.
- Combine Everything: Pour sauce over chicken and onions, stirring constantly for 2-3 minutes until sauce thickens and becomes glossy. Add cooked rice and toss gently.
- Serve Hot: Remove from heat and garnish with sliced green onions and fresh cilantro. Serve immediately while the sauce is still warm and sticky.
