Description

How to make sticky honey garlic buffalo chicken rice with tender chicken, sweet honey, and spicy buffalo sauce that creates the perfect comfort meal.

Ingredients

Scale

Chicken and Rice Base

  • lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 cups jasmine rice, rinsed until water runs clear
  • 3 cups low-sodium chicken broth
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, diced

Sticky Honey Garlic Sauce

  • ⅓ cup honey
  • ¼ cup buffalo sauce
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch

Seasonings and Garnish

  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 green onions, sliced thin
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Prep Chicken: Season chicken pieces with salt, pepper, garlic powder, and smoked paprika. Let sit for 10 minutes while you prepare other ingredients and heat your pan.
  2. Cook Rice: Rinse jasmine rice until water runs clear, then combine with chicken broth in a pot. Bring to boil, reduce heat, cover and simmer 18 minutes.
  3. Sear Chicken: Heat oil in large skillet over medium-high heat. Add seasoned chicken and cook 5-6 minutes until golden brown and cooked through, stirring occasionally.
  4. Make Sauce: Whisk together honey, buffalo sauce, minced garlic, soy sauce, rice vinegar, and cornstarch until smooth. This creates your sticky coating base.
  5. Add Aromatics: Add diced onion to chicken and cook 3 minutes until softened. The onion should be tender but still have a slight bite to it.
  6. Combine Everything: Pour sauce over chicken and onions, stirring constantly for 2-3 minutes until sauce thickens and becomes glossy. Add cooked rice and toss gently.
  7. Serve Hot: Remove from heat and garnish with sliced green onions and fresh cilantro. Serve immediately while the sauce is still warm and sticky.

Notes

  • Rinse rice thoroughly until water runs clear to prevent gummy texture.
  • Store leftovers in airtight container for up to 4 days in refrigerator.
  • Substitute maple syrup for honey if preferred, but reduce amount slightly.
  • Serve immediately while sauce is warm and sticky for best texture.
  • Double the sauce recipe if you love extra sticky coating on everything.
  • Use low-sodium soy sauce to control saltiness in the final dish.
