Instructions
- Prep Noodles: Cook noodles according to package directions until just tender. Drain and rinse with cold water to stop cooking, then toss with a little oil to prevent sticking.
- Make Sauce: Whisk together soy sauce, rice vinegar, brown sugar, and chili garlic sauce in a small bowl. Taste and adjust heat level to your preference before proceeding.
- Heat Oils: Heat vegetable oil in a large wok or skillet over medium-high heat until shimmering. The oil should be hot but not smoking for perfect garlic cooking.
- Cook Aromatics: Add minced garlic, ginger, fresh chilies, and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not browned to avoid bitterness.
- Combine Everything: Add cooked noodles and sauce mixture to the pan. Toss everything together for 2-3 minutes until noodles are heated through and well coated.
- Finish Dish: Remove from heat and stir in sesame oil and half the green onions. The residual heat will warm everything perfectly without overcooking the delicate flavors.
- Serve Hot: Divide among bowls and top with remaining green onions, sesame seeds, and cilantro. Serve immediately with lime wedges for that final bright flavor boost.
