Instructions
- Prep Chicken: Pound chicken breasts to even thickness and season with salt and pepper. Mix flour with all seasonings in a shallow dish, then coat each piece thoroughly.
- Sear Chicken: Heat oil in large skillet over medium-high heat. Cook chicken 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
- Cook Mushrooms: Add butter to same skillet and sauté sliced mushrooms until golden brown and tender, about 5 minutes. They should release their moisture and develop color.
- Make Gravy: Sprinkle flour over mushrooms and cook 1 minute. Gradually whisk in chicken broth, then cream and Worcestershire until smooth and thickened.
- Combine Everything: Return chicken to skillet and nestle into gravy. Top with both cheeses and cover. Cook 3-4 minutes until cheese melts completely.
- Finish Serving: Remove from heat and let rest 2 minutes. Garnish with chopped green onions and serve immediately while hot and bubbly for best results.
