Instructions

  1. Season Chicken: Pat chicken pieces dry and season generously with salt and pepper. This helps remove excess moisture so the chicken browns beautifully instead of steaming in its own juices.
  2. Sear Chicken: Heat olive oil in a large pot over medium-high heat. Add chicken and cook 5-6 minutes until golden brown on most sides. Don’t worry about cooking through completely – it’ll finish later.
  3. Build Aromatics: Add diced onion to the same pot and cook 3-4 minutes until softened and fragrant. Stir in minced garlic and cook 30 seconds more until aromatic but not browned.
