Instructions

  1. Season Chicken: Combine all cajun seasonings in a bowl, then toss chicken pieces until evenly coated. Let it sit for 5 minutes while you prep other ingredients – this helps flavors stick.
  2. Brown Chicken: Heat olive oil in large pot over medium-high heat. Add seasoned chicken and cook 5-6 minutes until golden brown on all sides but not fully cooked through yet.
  3. Sauté Aromatics: Add diced onion to the same pot and cook 3-4 minutes until softened. Stir in minced garlic and cook 30 seconds until fragrant but not burned.
