Instructions

  1. Season Chicken: Mix all Cajun spices in a bowl, then toss chicken pieces until evenly coated. Let it sit for 5 minutes while you prep vegetables – this helps the flavors penetrate.
  2. Sear Chicken: Heat olive oil in a large pot over medium-high heat. Add seasoned chicken and cook 5-6 minutes until golden brown and cooked through. Remove and set aside.
  3. Sauté Vegetables: In the same pot, add diced onion and bell pepper. Cook 4-5 minutes until softened, then add garlic and cook 30 seconds until fragrant.
