  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 5 oz fresh baby spinach
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Season Chicken: Pound chicken breasts to even thickness and season both sides with salt and pepper. Let rest 10 minutes to absorb flavors while you prep other ingredients.
  2. Sear Chicken: Heat olive oil in large skillet over medium-high heat. Sear chicken 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Cook Mushrooms: Add butter to same pan. Sauté sliced mushrooms 5-6 minutes until golden and moisture evaporates. Add garlic and thyme, cook 1 minute more.
  4. Deglaze Pan: Pour in wine or broth, scraping up browned bits from bottom. Let simmer 2 minutes until liquid reduces by half for concentrated flavor.
  5. Make Sauce: Reduce heat to low. Whisk in cream cheese until smooth, then add heavy cream and chicken broth. Stir in Parmesan and nutmeg.
  6. Add Spinach: Fold in fresh spinach and let wilt completely into the creamy sauce. Season with salt and pepper to taste for perfect flavor balance.
