Pasta Base
- 12 lasagna noodles

Chicken Filling
- 2 pounds boneless skinless chicken breasts, diced

- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1 teaspoon salt
Cheese Mixture
- 15 oz ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 large egg
- 2 tablespoons fresh parsley, chopped
Sauce & Topping
- 2 cups marinara sauce
- 1/2 cup mozzarella cheese, shredded for topping
Instructions
- Cook Noodles: Boil lasagna noodles in salted water until just al dente, about 8-10 minutes. Drain and lay flat on parchment paper to prevent sticking while you prepare the filling.
- Prepare Chicken: Heat olive oil in a large skillet over medium-high heat. Cook diced chicken with garlic, lemon zest, oregano, salt and pepper for 6-8 minutes until golden and cooked through.
- Make Filling: In a large bowl, combine ricotta, 1 cup mozzarella, Parmesan, egg, parsley, and lemon juice. Fold in the cooked chicken mixture until everything is well combined and creamy.
- Assemble Rolls: Spread 1/3 cup filling evenly over each noodle, leaving a small border. Roll up gently but firmly from one end, being careful not to squeeze out the filling.
- Arrange Dish: Spread marinara sauce in the bottom of a 9×13 baking dish. Place roll-ups seam-side down, then top with remaining mozzarella cheese for that perfect golden finish.
- Bake Perfect: Cover with foil and bake at 375°F for 25 minutes. Remove foil and bake 10 more minutes until cheese is bubbly and lightly golden on top.
