Chicken and Base

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 cups jasmine rice, rinsed
  • 3 cups chicken broth
  • 1/2 cup heavy cream

Honey BBQ Sauce

  • 1/3 cup BBQ sauce
  • 3 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp smoked paprika

Garlic Butter Base

  • 4 tbsp butter, divided
  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 tsp dried thyme

Seasonings and Garnish

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 green onions, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prep Chicken: Season chicken pieces with salt and pepper. Heat 2 tablespoons butter in large skillet over medium-high heat until foaming and fragrant.
  2. Cook Chicken: Add chicken to hot butter and cook 5-6 minutes until golden brown and cooked through. Remove chicken and set aside on plate.
  3. Build Base: Add remaining butter, onion, and garlic to same pan. Cook 3-4 minutes until onion softens and garlic becomes aromatic and golden.
  4. Cook Rice: Add rice, thyme, and chicken broth. Bring to boil, then reduce heat to low, cover and simmer 18 minutes until tender.
  5. Make Sauce: Whisk together BBQ sauce, honey, vinegar, soy sauce, and paprika in small bowl until smooth and well combined throughout.
  6. Combine Everything: Stir cream into cooked rice, then add chicken back to pan. Pour sauce over everything and toss gently to coat evenly.
  7. Finish Dish: Cook 2-3 minutes until heated through and sauce thickens slightly. Garnish with green onions and parsley before serving immediately while hot.
