Ingredients
Scale
Chicken and Base
- 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
- 2 cups jasmine rice, rinsed
- 3 cups chicken broth
- 1/2 cup heavy cream
Honey BBQ Sauce
- 1/3 cup BBQ sauce
- 3 tbsp honey
- 2 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1/2 tsp smoked paprika
Garlic Butter Base
- 4 tbsp butter, divided
- 6 cloves garlic, minced
- 1 medium onion, diced
- 1/2 tsp dried thyme
Seasonings and Garnish
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 2 green onions, chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Prep Chicken: Season chicken pieces with salt and pepper. Heat 2 tablespoons butter in large skillet over medium-high heat until foaming and fragrant.
- Cook Chicken: Add chicken to hot butter and cook 5-6 minutes until golden brown and cooked through. Remove chicken and set aside on plate.
- Build Base: Add remaining butter, onion, and garlic to same pan. Cook 3-4 minutes until onion softens and garlic becomes aromatic and golden.
- Cook Rice: Add rice, thyme, and chicken broth. Bring to boil, then reduce heat to low, cover and simmer 18 minutes until tender.
- Make Sauce: Whisk together BBQ sauce, honey, vinegar, soy sauce, and paprika in small bowl until smooth and well combined throughout.
- Combine Everything: Stir cream into cooked rice, then add chicken back to pan. Pour sauce over everything and toss gently to coat evenly.
- Finish Dish: Cook 2-3 minutes until heated through and sauce thickens slightly. Garnish with green onions and parsley before serving immediately while hot.
Notes
- Don’t skip rinsing the rice as it removes excess starch and prevents mushiness.
- Store leftovers in refrigerator for up to 3 days in airtight containers.
- Substitute maple syrup for honey if preferred for different flavor profile.
- Add frozen peas or corn in last 2 minutes for extra vegetables.
- Double the sauce recipe if you like extra saucy dishes.
- Use low-sodium broth to control salt levels since BBQ sauce adds sodium.
