Scale
Base Ingredients
- 8 slices artisan sourdough bread, cut 1/2 inch thick
- 8 oz ripe brie cheese, rind removed and sliced
- 4 tbsp unsalted butter, softened
- 2 tbsp mayonnaise
Caramelized Peaches
- 3 large ripe peaches, pitted and sliced thin
- 2 tbsp brown sugar
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1 pinch kosher salt
Flavor Enhancers
- 2 tbsp honey
- 1/4 cup fresh arugula leaves
- 2 tbsp chopped fresh thyme
- 1/4 tsp black pepper
- 1 tbsp balsamic glaze
- 2 tbsp toasted walnuts, chopped
Instructions
- Caramelize Peaches: Heat butter in a large skillet over medium heat. Add sliced peaches, brown sugar, cinnamon, and salt. Cook 8-10 minutes, stirring gently, until peaches are golden and caramelized. Stir in vanilla and set aside.
- Prepare Bread: Mix softened butter and mayonnaise in a small bowl. Spread this mixture evenly on one side of each bread slice. This creates the perfect golden crispy crust when grilled.
- Assemble Sandwiches: Place bread butter-side down. Layer brie, caramelized peaches, arugula, thyme, and walnuts on 4 slices. Drizzle with honey and balsamic glaze. Top with remaining bread slices, butter-side up.
- Heat Pan: Heat a large skillet or griddle over medium-low heat. Don’t use high heat or the outside will burn before the cheese melts. The key is patience for even browning.
- Grill Sandwiches: Cook sandwiches 3-4 minutes per side, pressing gently with spatula. Look for golden brown color and melted cheese. Cover with lid if needed to help cheese melt completely.
- Rest and Slice: Let sandwiches rest 2 minutes before cutting diagonally with sharp knife. This prevents all the melted cheese from oozing out when you take your first perfect bite.
- Serve Warm: Serve immediately while cheese is still warm and gooey. Garnish with extra thyme and a drizzle of balsamic glaze for beautiful presentation and extra flavor.
