Instructions

  2. Sear Chicken: Heat olive oil in large, heavy-bottomed pan over medium-high heat. Add chicken and cook 4-5 minutes until golden brown. Don’t move too early or it won’t brown properly.
  3. Sauté Aromatics: Remove chicken and add butter to same pan. Sauté onion for 3 minutes until softened, then add minced garlic and cook 30 seconds until fragrant.
  4. Add Spices: Stir in smoked paprika and chipotle chili powder, cooking for 30 seconds until aromatic. This step blooms the spices and prevents any raw spice taste.
  5. Combine Rice: Add rice and stir to coat with the aromatic mixture for 1-2 minutes. This toasts the rice slightly and helps prevent it from getting mushy later.
