Instructions

  1. Cook Pasta: Boil salted water and cook rotini until al dente according to package directions. Reserve 1 cup pasta water before draining completely.
  2. Sear Chicken: Heat olive oil in large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through, about 6-8 minutes.
  3. Build Base: Add diced onion to same skillet and cook until softened, about 4 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds more.
  4. Add Spices: Stir in chipotle peppers, adobo sauce, smoked paprika, cumin, and chili powder. Cook for 1 minute until aromatic and well combined throughout.
  5. Create Sauce: Pour in chicken broth and heavy cream, then whisk in softened cream cheese until smooth. Simmer for 3-4 minutes until slightly thickened and creamy.
  6. Combine Everything: Return chicken to skillet, add cooked pasta and cheddar cheese. Toss until cheese melts and everything is well coated, adding pasta water if needed.
