Description

How to make Mediterranean chicken stir fry with tender chicken, colorful vegetables, and aromatic herbs that brings sunshine to your dinner table.

Ingredients

Scale

Protein & Base

  • lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons olive oil, divided
  • 1 large red onion, sliced thin
  • 3 cloves garlic, minced

Mediterranean Vegetables

  • 1 large red bell pepper, cut into strips
  • 1 large yellow bell pepper, cut into strips
  • 1 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved

Seasonings & Herbs

  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper to taste

Finishing Touches

  • ¼ cup fresh lemon juice
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep Chicken: Season chicken pieces generously with salt, pepper, and half the oregano. Let sit for 5 minutes while you prep vegetables – this helps the flavors penetrate.
  2. Sear Chicken: Heat 2 tablespoons olive oil in large skillet over medium-high heat. Add chicken in single layer, cook 4-5 minutes until golden and cooked through. Remove to plate.
  3. Cook Aromatics: Add remaining oil to same pan. Sauté onion for 2 minutes until softening, then add garlic for 30 seconds until fragrant but not brown.
  4. Add Vegetables: Toss in bell peppers and zucchini. Cook 3-4 minutes stirring frequently until peppers are crisp-tender and zucchini is just cooked through but still has bite.
  5. Season Everything: Sprinkle in remaining oregano, basil, paprika, and red pepper flakes. Stir for 30 seconds until herbs are fragrant and coat all the vegetables evenly.
  6. Combine & Finish: Return chicken to pan with cherry tomatoes and olives. Toss gently for 1-2 minutes until tomatoes just start to soften and everything is heated through.
  7. Final Touch: Remove from heat, drizzle with lemon juice, and top with crumbled feta and fresh parsley. Serve immediately while everything is warm and vibrant.

Notes

  • Don’t overcrowd the pan when cooking chicken or it will steam instead of sear properly.
  • Store leftovers in airtight container for up to 3 days; flavors improve overnight.
  • Feel free to swap vegetables based on what’s seasonal or what you have available.
  • Add feta at the end so it doesn’t melt completely and maintains its creamy texture.
  • Lemon juice should be added off the heat to preserve its bright, fresh flavor.
