- 1 large yellow bell pepper, cut into strips
- 1 medium zucchini, sliced into half-moons
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and halved

- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes
- Salt and black pepper to taste
Finishing Touches
- ¼ cup fresh lemon juice
- ¼ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Prep Chicken: Season chicken pieces generously with salt, pepper, and half the oregano. Let sit for 5 minutes while you prep vegetables – this helps the flavors penetrate.
- Sear Chicken: Heat 2 tablespoons olive oil in large skillet over medium-high heat. Add chicken in single layer, cook 4-5 minutes until golden and cooked through. Remove to plate.
- Cook Aromatics: Add remaining oil to same pan. Sauté onion for 2 minutes until softening, then add garlic for 30 seconds until fragrant but not brown.
- Add Vegetables: Toss in bell peppers and zucchini. Cook 3-4 minutes stirring frequently until peppers are crisp-tender and zucchini is just cooked through but still has bite.
- Season Everything: Sprinkle in remaining oregano, basil, paprika, and red pepper flakes. Stir for 30 seconds until herbs are fragrant and coat all the vegetables evenly.
- Combine & Finish: Return chicken to pan with cherry tomatoes and olives. Toss gently for 1-2 minutes until tomatoes just start to soften and everything is heated through.
- Final Touch: Remove from heat, drizzle with lemon juice, and top with crumbled feta and fresh parsley. Serve immediately while everything is warm and vibrant.

- Don’t overcrowd the pan when cooking chicken or it will steam instead of sear properly.

- Feel free to swap vegetables based on what’s seasonal or what you have available.
