Instructions
- Season Chicken: Pat chicken thighs dry and cut into bite-sized pieces. Toss with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated. Let sit 5 minutes.
- Heat Skillet: Heat olive oil in a large cast iron or heavy skillet over medium-high heat. The oil should shimmer but not smoke when it’s ready for the chicken.
- Sear Chicken: Add seasoned chicken to hot skillet in single layer. Don’t overcrowd or stir for 3-4 minutes until golden brown and crispy on bottom before flipping.
