Description

How to make sticky buffalo honey chicken skillet with tender chicken thighs and sweet heat sauce that’s ready in just 25 minutes for busy weeknights.

Ingredients

Scale

Chicken Base

  • 2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Buffalo Honey Sauce

  • 1/3 cup buffalo wing sauce
  • 1/4 cup honey
  • 2 tbsp butter
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce

Garnish

  • 2 green onions, sliced thin
  • 1 tbsp fresh parsley, chopped
  • 1 tsp sesame seeds

Instructions

  1. Season Chicken: Pat chicken thighs dry and cut into bite-sized pieces. Toss with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated. Let sit 5 minutes.
  2. Heat Skillet: Heat olive oil in a large cast iron or heavy skillet over medium-high heat. The oil should shimmer but not smoke when it’s ready for the chicken.
  3. Sear Chicken: Add seasoned chicken to hot skillet in single layer. Don’t overcrowd or stir for 3-4 minutes until golden brown and crispy on bottom before flipping.
  4. Make Sauce: While chicken cooks, whisk together buffalo sauce, honey, melted butter, apple cider vinegar, and Worcestershire sauce in a small bowl until smooth.
  5. Flip Chicken: Turn chicken pieces and cook another 3-4 minutes until second side is golden and internal temperature reaches 165°F. The edges should be beautifully caramelized.
  6. Add Sauce: Pour buffalo honey sauce over chicken and stir gently to coat. Let simmer 2-3 minutes until sauce thickens and becomes glossy, coating each piece.
  7. Garnish Serve: Remove from heat and sprinkle with sliced green onions, fresh parsley, and sesame seeds. Serve immediately while the sauce is still warm and sticky.

Notes

  • Don’t skip patting the chicken dry or you won’t get crispy edges.
  • Store leftovers in the refrigerator for up to 3 days in airtight containers.
  • Adjust buffalo sauce amount based on your heat preference and tolerance.
  • Serve immediately while sauce is warm and glossy for best texture.
  • Double the sauce recipe if you want extra for drizzling over sides.
