- 12 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon chili powder
- 2 cloves garlic, minced
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Place eggs in a large pot and cover with cold water. Bring water to a boil, then let eggs cook for 9-12 minutes.
- Once eggs are cooked, drain water and let eggs cool.
- Peel eggs, cut them in half lengthwise, and remove the yolks.
- In a bowl, mix yolks with mayonnaise, Dijon mustard, chili powder, and minced garlic. Season with salt and pepper.
- Fill each egg white with the yolk mixture. Sprinkle with paprika for garnish.
- Refrigerate for at least an hour before serving.
Notes
- Make sure to fully cool the eggs before peeling them.
- Add more chili powder for extra spice.
- These can be made a day ahead and kept refrigerated.
