Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Marinate for 10 minutes.
  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink.
  3. In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, and cilantro.
