A refreshing Shrimp with Avocado and Tomato Salad perfect for a light meal or appetizer.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 ripe avocados, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Marinate for 10 minutes.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink.
- In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, and cilantro.
- Add the cooked shrimp to the salad mixture and toss gently to combine.
- Serve immediately, garnished with additional cilantro if desired.
Notes
- Adjust lime juice according to taste.
- Can be served chilled or at room temperature.
