A delicious and refreshing quick pasta salad tossed with Italian dressing, perfect for picnics or as a side dish.
Ingredients

- 8 oz pasta (fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
- Pour the Italian dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving for the flavors to meld.
Notes
- This salad can be made a day in advance.
- Feel free to add other vegetables or proteins like diced chicken or mozzarella.
- Store leftovers in the refrigerator for up to 3 days.
