Chicken & Marinade
- 1.5 lbs boneless chicken thighs, cut into bite-sized pieces
- 2 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tsp garlic powder
Firecracker Sauce
- 1/3 cup brown sugar, packed
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp chili garlic sauce
- 1 tbsp sriracha sauce
- 1 tsp fresh ginger, minced
Stir Fry Vegetables
- 1 red bell pepper, sliced thin
- 1 green bell pepper, sliced thin
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 green onions, chopped
- 2 tbsp vegetable oil for cooking
Instructions
- Prep Chicken: Toss chicken pieces with cornstarch, soy sauce, and garlic powder until evenly coated. Let marinate for 10 minutes while you prepare the sauce and vegetables.
- Make Sauce: Whisk together brown sugar, soy sauce, rice vinegar, chili garlic sauce, sriracha, and ginger until smooth. Taste and adjust heat level to your preference.
- Cook Chicken: Heat 1 tablespoon oil in large wok or skillet over high heat. Add chicken and cook 5-6 minutes until golden and cooked through. Remove and set aside.
- Stir Fry: Add remaining oil to pan. Stir fry bell peppers and onion for 3-4 minutes until crisp-tender. Add garlic and cook 30 seconds until fragrant.
- Combine Everything: Return chicken to pan and pour in firecracker sauce. Stir fry 2-3 minutes until sauce thickens and coats everything beautifully with glossy finish.
- Finish & Serve: Remove from heat and sprinkle with chopped green onions. Serve immediately over steamed rice while hot for the best flavor and texture experience.

- Don’t overcrowd the pan or chicken will steam instead of getting crispy edges.
