- 1 lb sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup corn kernels (fresh or frozen)

- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned.
- Add onion and garlic, sauté until translucent.
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer.
- Cook for about 15-20 minutes, or until potatoes are tender.
