- 8 ounces of rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1 cup mozzarella cheese, cubed
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to the package directions. Drain and set aside to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella cheese.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
