A refreshing and healthy Greek salad made with fresh vegetables and feta cheese, dressed with olive oil and herbs.
Ingredients

- 4 ripe tomatoes, diced
- 1 cucumber, peeled and diced
- 1 red onion, thinly sliced
- 1 bell pepper (red or green), diced
- 200g feta cheese, crumbled
- 100g Kalamata olives
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, red onion, and bell pepper.
- Add the crumbled feta cheese and Kalamata olives to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
Notes
- For a vegan version, omit the feta cheese or use a vegan cheese substitute.
- Feel free to add other vegetables like radishes or capers for extra flavor.
- This salad can be prepared a few hours ahead of time; just add the dressing right before serving.
