- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup mini pepperoni
- 1 cup black olives, sliced
- 1 cup mozzarella balls
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, diced
- 1/2 cup Italian dressing
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, mini pepperoni, black olives, mozzarella balls, bell peppers, and red onion.
- Pour the Italian dressing over the salad and toss to combine.
- Add the chopped basil and season with salt and pepper to taste. Toss again.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add any other antipasto ingredients you like, such as artichoke hearts or roasted red peppers.
- This salad can be made a day in advance for better flavor.
