Description
A healthy and delicious alternative to traditional lasagna, made with layers of zucchini instead of pasta, packed with flavor and low in carbs.

- 2 medium zucchinis, sliced
- 1 pound ground turkey or beef
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup marinara sauce
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips and sprinkle with salt. Let them sit for 10 minutes to draw out moisture, then pat dry.
- In a skillet, cook the ground turkey or beef over medium heat until browned. Add garlic and Italian seasoning; cook for an additional 2 minutes.
- In a bowl, mix ricotta cheese, egg, salt, and pepper until well combined.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer zucchini slices, then add the ricotta mixture, followed by the meat mixture, and a sprinkle of mozzarella cheese. Repeat the layers until all ingredients are used, ending with mozzarella on top.
- Bake in the preheated oven for 30-35 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- For a vegan version, substitute ground meat with lentils and use plant-based cheese.
- Make sure to pat the zucchini dry to prevent excess moisture in the dish.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
