Description

Ingredients

  • 2 medium zucchinis, sliced
  • 1 pound ground turkey or beef
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips and sprinkle with salt. Let them sit for 10 minutes to draw out moisture, then pat dry.
  3. In a skillet, cook the ground turkey or beef over medium heat until browned. Add garlic and Italian seasoning; cook for an additional 2 minutes.
  4. In a bowl, mix ricotta cheese, egg, salt, and pepper until well combined.
  5. In a baking dish, spread a layer of marinara sauce on the bottom.
  6. Layer zucchini slices, then add the ricotta mixture, followed by the meat mixture, and a sprinkle of mozzarella cheese. Repeat the layers until all ingredients are used, ending with mozzarella on top.
  7. Bake in the preheated oven for 30-35 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before slicing and serving.

Notes

  • For a vegan version, substitute ground meat with lentils and use plant-based cheese.
  • Make sure to pat the zucchini dry to prevent excess moisture in the dish.
