zucchini garlic bites


Description

Crispy and flavorful zucchini bites infused with garlic, perfect as an appetizer or snack.


Ingredients

  • 2 medium zucchinis, grated
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C) if baking.
  2. In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, eggs, oregano, salt, and pepper.
  3. Mix until well combined.
  4. Form the mixture into small patties or bites.
  5. Heat olive oil in a skillet over medium heat. Fry the bites until golden brown on each side, about 3-4 minutes. Alternatively, place the bites on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  6. Remove from heat and let cool slightly before serving.

Notes

  • For a healthier version, bake instead of frying.
  • Serve with a dipping sauce of your choice.
  • Can be made ahead of time and frozen for later use.
