Ingredients

- 2 medium zucchinis, grated
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat the oven to 400°F (200°C) if baking.
- In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, eggs, oregano, salt, and pepper.
- Mix until well combined.
- Form the mixture into small patties or bites.
- Heat olive oil in a skillet over medium heat. Fry the bites until golden brown on each side, about 3-4 minutes. Alternatively, place the bites on a baking sheet and bake for 20-25 minutes, flipping halfway through.
- Remove from heat and let cool slightly before serving.
Notes
- For a healthier version, bake instead of frying.
- Serve with a dipping sauce of your choice.
- Can be made ahead of time and frozen for later use.
