Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the grated zucchini.
  5. In another bowl, mix together the flour, oats, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chocolate chips.
  8. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
