  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the grated zucchini, sugar, oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined. Fold in walnuts if using.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the bars to cool completely in the pan.
  8. In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  9. Spread the cream cheese frosting over the cooled zucchini bars and cut into squares to serve.
