- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix together the grated zucchini, sugar, oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the zucchini mixture, stirring until just combined. Fold in walnuts if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan.
- In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese frosting over the cooled zucchini bars and cut into squares to serve.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These bars can be frozen for up to 3 months without frosting.
- Feel free to add chocolate chips for extra sweetness.
