- 1 cup watermelon juice
- 1/4 cup sugar

- Watermelon pieces (for filling)
Instructions
- In a mixing bowl, combine glutinous rice flour, sugar, and salt.
- Add watermelon juice gradually and mix until smooth.
- Transfer the mixture to a heatproof dish.
- Steam the mixture for about 20 minutes until it becomes sticky.
- Allow the dough to cool slightly, then knead it on a cornstarch-dusted surface.
- Divide the dough into small pieces and flatten each piece.
- Place a small piece of watermelon in the center of each dough piece and wrap it around the filling.
- Shape the mochi into balls and dust with cornstarch to prevent sticking.
- Serve immediately or refrigerate for later enjoyment.
Notes
- Ensure the watermelon juice is strained to remove pulp.
- You can use food coloring for a more vibrant color.
- Store in an airtight container in the refrigerator for up to 3 days.
