Description
A refreshing and sweet watermelon jam made quickly in an Instant Pot, perfect for spreading on toast or as a topping for desserts.

- 4 cups watermelon, diced
- 1 cup sugar
- 1/4 cup lemon juice
- 1/2 teaspoon cinnamon (optional)
- 1/4 cup pectin
Instructions
- Prepare the watermelon by removing the rind and seeds, then dice it into small pieces.
- Add the diced watermelon, sugar, lemon juice, and cinnamon to the Instant Pot.
- Seal the Instant Pot lid and set it to cook on high pressure for 10 minutes.
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
- Stir in the pectin and mix well.
- Transfer the jam to sterilized jars and let it cool before sealing.
Notes
- Store the jam in the refrigerator for up to 3 weeks.
- This jam can also be canned for long-term storage.
- Adjust sugar based on your sweetness preference.
