Description

Ingredients

  • 4 cups watermelon, diced
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup pectin

Instructions

  1. Prepare the watermelon by removing the rind and seeds, then dice it into small pieces.
  2. Add the diced watermelon, sugar, lemon juice, and cinnamon to the Instant Pot.
  3. Seal the Instant Pot lid and set it to cook on high pressure for 10 minutes.
  4. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  5. Stir in the pectin and mix well.
  6. Transfer the jam to sterilized jars and let it cool before sealing.

Notes

  • Store the jam in the refrigerator for up to 3 weeks.
  • This jam can also be canned for long-term storage.
