  • 6 slices of bacon
  • 1 medium onion, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Scrub the potatoes and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. While the potatoes are cooking, fry the bacon in a skillet until crispy. Remove the bacon and crumble it, leaving the drippings in the pan.
