- 2 pounds new potatoes
- 6 slices of bacon
- 1 medium onion, chopped
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon sugar
- 1 teaspoon mustard
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Scrub the potatoes and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
- While the potatoes are cooking, fry the bacon in a skillet until crispy. Remove the bacon and crumble it, leaving the drippings in the pan.
- Add the chopped onion to the skillet and sauté in the bacon drippings until translucent.
- In a small bowl, whisk together the apple cider vinegar, water, sugar, mustard, salt, and pepper.
- Drain the potatoes and slice them while still warm. Add them to the skillet with the onions and pour the vinegar dressing over the top.
- Gently toss to combine all ingredients and allow to sit for a few minutes to absorb the flavors.
- Serve warm, garnished with crumbled bacon and chopped parsley.

- This salad is best served warm but can be made ahead and served at room temperature.
