- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10 minutes, turning occasionally, until charred.
- In a large bowl, mix together mayonnaise, sour cream, feta, cilantro, lime juice, chili powder, salt, and pepper.
- Once the corn is cool enough to handle, cut the kernels off the cob and add them to the bowl.
- Toss to combine all ingredients evenly.
- Serve chilled or at room temperature.
Notes
- For a spicier version, add diced jalapeños.
