A delicious and healthy twist on traditional egg rolls, packed with turkey and fresh veggies.
Ingredients

- 1 lb ground turkey
- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- 1 bell pepper, diced
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add ground turkey and cook until browned, about 5-7 minutes.
- Stir in garlic, ginger, cabbage, carrots, bell pepper, and green onions.
- Cook for another 5 minutes until veggies are tender.
- Add soy sauce and mix well. Remove from heat and let cool.
- Place about 2 tablespoons of the turkey mixture in the center of each egg roll wrapper.
- Fold the sides over the filling, then roll tightly from the bottom up to seal.
- Heat oil in a pan over medium-high heat. Fry egg rolls until golden brown on all sides.
- Drain on paper towels and serve hot.
Notes
- For a healthier option, bake the egg rolls instead of frying.
- Can substitute ground turkey with ground chicken or tofu for a vegetarian option.
- Serve with sweet and sour sauce or soy sauce for dipping.
