  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water, then combine with water in a pot.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  3. Let quinoa cool to room temperature.
  4. In a large bowl, combine black beans, corn, bell peppers, red onion, cherry tomatoes, and avocado.
  5. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  6. Add cooled quinoa to the vegetable mixture and pour dressing over.
  7. Toss gently to combine and garnish with cilantro.
  8. Serve chilled or at room temperature.
