Description

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup ube (purple yam) jam
1/2 cup milk
Ube extract (optional, for added color)
Purple food coloring (optional)
1/2 cup grated cheese (for topping)


Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
In a separate bowl, cream the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Mix in the ube jam and milk until well combined.
If desired, add a few drops of ube extract and purple food coloring for a more vibrant color.
Gradually add the dry ingredients into the wet ingredients, mixing until smooth.
Pour the batter into the prepared pan and spread it evenly.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and sprinkle the grated cheese on top. Return to the oven for a few more minutes until the cheese is melted and slightly golden.
Allow the cake to cool before slicing and serving.
