A refreshing and nutritious Turkish White Bean Salad, perfect as a side dish or a light meal.

- 1 cup dried white beans
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Soak the white beans overnight in water.
- Drain and rinse the beans, then cook them in boiling water for about 1 hour or until tender.
- Drain the cooked beans and let them cool.
- In a large bowl, combine the beans, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, you can include diced cucumber or bell pepper.
- This salad can be made a day in advance for better flavor melding.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
