Description

Ingredients

  • 1 cup dried white beans
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Soak the white beans overnight in water.
  2. Drain and rinse the beans, then cook them in boiling water for about 1 hour or until tender.
  3. Drain the cooked beans and let them cool.
  4. In a large bowl, combine the beans, cherry tomatoes, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve chilled or at room temperature.
