Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 1 cup mango puree
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 ripe mango, diced

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter. Press into the base of a springform pan. Chill.
  2. Beat cream cheese, sugar, and vanilla until smooth. Fold in mango puree. Pour over crust. Chill.
  3. Whip heavy cream with powdered sugar until stiff peaks form. Spread over the cheesecake.
  4. Chill for at least 4 hours. Top with diced mango before serving.

Notes

  • If mango is not sweet enough, add a dash of honey to the puree.
  • For extra flair, toast some coconut flakes to sprinkle on top.
