Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup sugar

Instructions

  1. First, preheat your oven to 325°F.
  2. Next, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a springform pan.
  3. Meanwhile, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, lemon zest, and vanilla.
  4. Then, pour the mixture over the crust and bake for 55 minutes until set.
  5. While the cheesecake is baking, make the meringue by beating egg whites with cream of tartar until foamy. Gradually add 1/2 cup sugar and beat until stiff peaks form.
  6. Spread the meringue over the cheesecake and bake for an additional 12-15 minutes until golden brown.
  7. Chill before serving and enjoy!

Notes

  • For extra lemon flavor, add more zest to the meringue.
