Ingredients

  • 2 cups of sugar
  • 1 cup of honey
  • 2 egg whites
  • 3 cups of toasted almonds
  • 1 cup of toasted hazelnuts
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • Wafer paper

Instructions

  1. Line a baking pan with wafer paper and set aside.
  2. In a saucepan, combine sugar and honey, and cook over medium heat until the mixture reaches 250°F (121°C).
  3. In a separate bowl, whip the egg whites until stiff peaks form.
  4. Gradually add the hot sugar mixture to the egg whites while continuing to whisk until well combined.
  5. Fold in the toasted almonds and hazelnuts, vanilla extract, and salt.
  6. Pour the mixture into the prepared baking pan and spread evenly.
  7. Cover with another layer of wafer paper and press down gently.
  8. Let it cool completely before cutting into pieces.

Notes

  • Store in an airtight container to maintain freshness.
  • Can substitute nuts based on preference.
  • Increase honey for a softer texture.
