Ingredients

- 2 cups of sugar
- 1 cup of honey
- 2 egg whites
- 3 cups of toasted almonds
- 1 cup of toasted hazelnuts
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- Wafer paper
Instructions
- Line a baking pan with wafer paper and set aside.
- In a saucepan, combine sugar and honey, and cook over medium heat until the mixture reaches 250°F (121°C).
- In a separate bowl, whip the egg whites until stiff peaks form.
- Gradually add the hot sugar mixture to the egg whites while continuing to whisk until well combined.
- Fold in the toasted almonds and hazelnuts, vanilla extract, and salt.
- Pour the mixture into the prepared baking pan and spread evenly.
- Cover with another layer of wafer paper and press down gently.
- Let it cool completely before cutting into pieces.

- Can substitute nuts based on preference.
- Increase honey for a softer texture.
