- 1 lb boneless, skinless chicken breasts
- 2 cups green enchilada sauce
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 cup chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add the chicken breasts and cook until browned.
- Pour in the green enchilada sauce, chicken broth, cannellini beans, corn, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes.
- Remove chicken, shred it, and return it to the pot.
- Stir in fresh cilantro before serving.

- This chili can be made in a slow cooker for an easy meal prep option.
- Top with avocado, cheese, or sour cream if desired.
