Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups green enchilada sauce
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup chicken broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add the chicken breasts and cook until browned.
  3. Pour in the green enchilada sauce, chicken broth, cannellini beans, corn, cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in fresh cilantro before serving.
