  • 1 can (4 oz) diced green chiles
  • 3 cups beef broth, low sodium
  • 1 cup frozen corn kernels

  • 4 oz cream cheese, cubed and softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded

Fresh Toppings

  • 1/4 cup fresh cilantro, chopped

  • 1 lime, cut into wedges

Instructions

  1. Brown Beef: Heat a large Dutch oven over medium-high heat. Add ground beef and cook for 5-6 minutes, breaking it up with a spoon, until browned and no longer pink.
  2. Add Aromatics: Add diced onion to the beef and cook for 3-4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant and golden.
  3. Season Everything: Sprinkle taco seasoning over the beef mixture and stir to coat evenly. Cook for 1 minute to toast the spices and release their aromatic oils.
  4. Add Liquids: Pour in diced tomatoes with juice, green chiles, and beef broth. Stir in uncooked pasta and frozen corn, ensuring pasta is mostly submerged in liquid.
  5. Simmer Pasta: Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  6. Add Cheese: Remove from heat and stir in cubed cream cheese until melted. Add cheddar and Monterey Jack, stirring until creamy and smooth throughout.
