Ingredients
Scale
Garlic Butter Base
- 6 tablespoons unsalted butter, softened
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Sandwich Assembly
- 8 slices thick-cut white bread or sourdough
- 8 ounces sharp cheddar cheese, sliced
- 4 ounces mozzarella cheese, sliced
- 2 ounces cream cheese, softened
- 1 tablespoon mayonnaise
- 1/4 teaspoon onion powder
Finishing Touches
- 2 tablespoons extra butter for cooking
- 1/4 teaspoon dried Italian seasoning
- 2 tablespoons grated Parmesan cheese
- Fresh chives for garnish
Instructions
- Make Garlic Butter: Mix softened butter, minced garlic, parsley, garlic powder, salt, and pepper in a bowl. Mash everything together until well combined and fragrant.
- Prepare Cheese Mixture: Combine softened cream cheese, mayonnaise, and onion powder in a small bowl. This creamy base helps the cheeses melt evenly and prevents separation.
- Assemble Sandwiches: Spread garlic butter on one side of each bread slice. On the unbuttered side, spread cream cheese mixture, then layer cheddar and mozzarella.
- Add Finishing Touches: Sprinkle Italian seasoning and Parmesan cheese over the cheese layers before closing sandwiches. Press gently to help everything stick together.
- Cook First Side: Heat a large skillet over medium-low heat. Add extra butter, then place sandwiches garlic butter side down. Cook 3-4 minutes until golden brown.
- Flip and Finish: Carefully flip sandwiches and cook another 3-4 minutes until second side is golden and cheese is completely melted. Cover with lid if needed.
- Serve Immediately: Remove from heat, let cool for 1 minute, then slice diagonally. Garnish with fresh chives and serve while the cheese is still perfectly melted.
Notes
- Keep heat at medium-low to prevent garlic from burning and turning bitter.
- Store leftover garlic butter in refrigerator for up to 5 days for future use.
- Day-old bread works better than fresh as it holds up to the butter without getting soggy.
- Cover the pan while cooking if cheese isn’t melting fast enough.
- Let sandwiches rest 1 minute before cutting to prevent cheese from oozing out.
