Ingredients
Scale
Crispy Chicken
- 4 boneless skinless chicken breasts, pounded to 1/2-inch thickness
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 cup vegetable oil for frying
Caesar Dressing
- 1/3 cup mayonnaise
- 2 tbsp freshly grated Parmesan cheese
- 1 tbsp fresh lemon juice
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- 1/4 tsp black pepper
Assembly
- 8 slices sourdough bread, toasted
- 4 cups romaine lettuce, chopped
Instructions
- Prep Chicken: Pound chicken to even 1/2-inch thickness between plastic wrap. Season both sides with salt and pepper, letting it rest while you prepare the coating stations.
- Setup Stations: Set up three shallow dishes: flour in first, beaten eggs in second, panko mixed with garlic powder, onion powder, and paprika in third.
- Coat Chicken: Dredge each piece in flour, then egg, then seasoned panko, pressing gently to help coating adhere. Let coated chicken rest 5 minutes before frying.
- Make Dressing: Whisk together mayo, Parmesan, lemon juice, Worcestershire, minced garlic, and black pepper until smooth. Taste and adjust seasoning as needed for perfect flavor.
- Fry Chicken: Heat oil to 350°F in large skillet. Fry chicken 3-4 minutes per side until golden brown and internal temperature reaches 165°F.
- Toast Bread: Toast sourdough slices until golden and crispy. Spread Caesar dressing on one side of each slice while chicken rests on paper towels.
- Assemble Sandwiches: Layer romaine lettuce on bottom bread slice, add crispy chicken, then top with more lettuce and remaining bread slice. Serve immediately while chicken is hot.
Notes
- Don’t overcrowd the pan when frying or temperature will drop and coating gets soggy.
- Caesar dressing can be made up to one week ahead and stored in refrigerator.
- Substitute chicken thighs for breasts if you prefer more flavor and moisture.
- Serve immediately while chicken is hot for best texture and taste.
- Double the dressing recipe if you like extra sauce on your sandwich.
- Panko breadcrumbs create much better texture than regular breadcrumbs for crispiness.
