Description
How to make creamy chicken stroganoff with tender chicken, mushrooms, and a rich sauce that’s ready in just 30 minutes for a satisfying meal.
Ingredients
- Main Components:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 1 medium yellow onion, finely diced
- 12 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- Sauce Base & Flavor Builders:
- 2 tbsp all-purpose flour
- 1.5 cups low-sodium chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 cup full-fat sour cream, at room temperature
- Seasoning & Garnish:
- 1 tsp kosher salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Sear Chicken & Sauté: Heat olive oil in a large skillet. Sear chicken until golden brown, then remove. Add butter, then sauté onion, mushrooms until softened. Add garlic and cook for 1 minute until fragrant. This starts our 30-Minute Creamy Chicken Stroganoff base.
- Build Flavor Base: Sprinkle flour over the sautéed vegetables, stirring well to coat. Cook for about 1-2 minutes, stirring constantly, to cook out the raw flour taste and create a flavorful base for your sauce. This will help thicken our 30-Minute Creamy Chicken Stroganoff.
- Whisk Sauce: Slowly whisk in the chicken broth, Worcestershire sauce, and Dijon mustard until completely smooth and there are no lumps. Continue whisking as the mixture begins to thicken slightly, ensuring a perfectly emulsified base.
- Simmer Stroganoff: Return the seared chicken pieces to the skillet. Bring the sauce to a gentle simmer, stirring occasionally, and cook for 5-7 minutes until the chicken is cooked through and the sauce has thickened beautifully.
- Finish Creamy Sauce: Remove the skillet from the heat. Gently stir in the room temperature sour cream until fully incorporated and the sauce is wonderfully creamy. Season generously with kosher salt and freshly ground black pepper to taste.
- Garnish & Serve: Garnish your delectable 30-Minute Creamy Chicken Stroganoff generously with fresh chopped parsley. Serve immediately over noodles, rice, or mashed potatoes for a truly comforting and satisfying meal that’s ready in a flash!
Notes
Always use room temperature, full-fat sour cream and remove from heat before adding to prevent curdling.
Store cooled stroganoff in an airtight container in the refrigerator for up to 3-4 days; check for freshness.
Boneless, skinless chicken thighs can be substituted for breasts for a juicier, more flavorful stroganoff.
Serve hot over egg noodles, rice, or mashed potatoes, garnished with fresh parsley for a comforting meal.
Prep chicken and mushrooms a day or two in advance. Cook the full stroganoff fresh for the best creamy texture.
