Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchinis and place them in a bowl. Sprinkle salt over the grated zucchini and let it sit for 10 minutes.
  2. After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.
  3. In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, green onions, garlic, and black pepper. Mix until well combined.
  4. Heat the olive oil in a skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
  6. Cook for 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
  8. Serve warm, optionally with a dipping sauce of your choice.
