Description
These zucchini fritters are crispy on the outside, soft on the inside, and packed with flavor. They make a perfect appetizer or side dish.

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 green onions, finely chopped
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchinis and place them in a bowl. Sprinkle salt over the grated zucchini and let it sit for 10 minutes.
- After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.
- In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, green onions, garlic, and black pepper. Mix until well combined.
- Heat the olive oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
- Serve warm, optionally with a dipping sauce of your choice.
Notes
- For a gluten-free version, substitute all-purpose flour with gluten-free flour.
- These fritters can be made ahead of time and reheated in the oven.
