- 8 ounces of rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let it cool.
- In a large mixing bowl, combine the cherry tomatoes, black olives, feta cheese, red onion, and parsley.
- Add the cooled pasta to the bowl with the vegetables and cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
