- 1 can black-eyed peas, drained and rinsed
- 1 cup corn, drained
- 1 bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño, seeded and diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine the black-eyed peas, corn, bell pepper, red onion, jalapeño, and cilantro.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, garlic powder, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled as a dip with tortilla chips or as a side dish.
