Description
Tater Tot Cups are a fun and delicious appetizer or snack made with crispy tater tots, filled with cheese, bacon, and a fluffy egg mixture. Perfect for parties or game day!
Ingredients
2 cups frozen tater tots
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup green onions, chopped
4 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven to 400°F (200°C).
Grease a muffin tin with cooking spray or butter.
In a large bowl, place the frozen tater tots and mash them slightly with a fork.
Press the mashed tater tots into the bottom and up the sides of each muffin cup to form a crust.
Bake the tater tot crusts in the preheated oven for 15 minutes until they are golden and crispy.
In another bowl, whisk together the eggs, milk, salt, and black pepper.
Remove the muffin tin from the oven and sprinkle the cheddar cheese, crumbled bacon, and green onions evenly into each tater tot cup.
Pour the egg mixture over the toppings in each cup, filling them about 3/4 full.
Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the egg is set and the tops are lightly golden.
Allow to cool for a few minutes before carefully removing the tater tot cups from the muffin tin.
Serve warm and enjoy!
