A delicious and hearty Taco Lasagna Bake that combines the flavors of tacos and lasagna in a single dish, perfect for family dinners.

- 12 lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups salsa
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 1 can black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the taco seasoning, salsa, black beans, and corn to the skillet; stir to combine and cook for 5 minutes.
- In a baking dish, layer 4 lasagna noodles, half of the beef mixture, half of the sour cream, and a third of the cheese.
- Repeat the layering process, finishing with the remaining noodles, sour cream, and cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Remove from oven and let it cool for 10 minutes before serving.
- Garnish with chopped green onions and cilantro before serving.
Notes
- For a vegetarian version, replace ground beef with lentils or additional beans.
- Add sliced jalapeños for extra heat.
- This dish can be prepared ahead of time and stored in the refrigerator before baking.
