- 1 pound of chicken breast, diced
- 1 can (20 oz) of pineapple chunks in juice
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 tablespoons of olive oil
- 1 tablespoon of brown sugar
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Add the onion, garlic, and bell pepper. Sauté until the vegetables are tender.
- Stir in the pineapple chunks with their juice, soy sauce, and brown sugar. Cook for an additional 5 minutes.
- Add the cooked rice to the skillet and mix until well combined. Season with salt and pepper to taste.
