Delightful Summer Berry and Peach Cheesecake for a taste of sunshine
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup sliced peaches
- 1 cup mixed berries
- 1/4 cup peach preserves
Instructions
- Preheat oven to 350°F. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into bottom of a springform pan.
- Beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
- Bake for 30 minutes. Cool, then chill for 3 hours.
- Arrange peaches and berries on top of the cheesecake.
- Heat peach preserves until smooth, then brush over fruit.
- Chill for another 30 minutes before serving.
Notes
- You can use any combination of berries you like.
- Make sure the cream cheese is at room temperature for a smooth batter.
- Brushing the fruit with preserves adds shine and flavor.
