Delightful Summer Berry and Peach Cheesecake for a taste of sunshine


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup sliced peaches
  • 1 cup mixed berries
  • 1/4 cup peach preserves

Instructions

  1. Preheat oven to 350°F. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into bottom of a springform pan.
  2. Beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
  3. Bake for 30 minutes. Cool, then chill for 3 hours.
  4. Arrange peaches and berries on top of the cheesecake.
  5. Heat peach preserves until smooth, then brush over fruit.
  6. Chill for another 30 minutes before serving.

Notes

  • You can use any combination of berries you like.
  • Make sure the cream cheese is at room temperature for a smooth batter.
  • Brushing the fruit with preserves adds shine and flavor.
