This Street Corn Chicken Rice Bowl combines the flavors of street corn with grilled chicken and rice for a delicious and satisfying meal.
Ingredients
2 boneless, skinless chicken breasts
1 cup cooked rice
1 cup corn kernels
1/2 red onion, diced
1/4 cup chopped cilantro
1/4 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1 lime, juiced
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Season chicken breasts with salt, pepper, and olive oil. Grill or pan-sear until cooked through. Let rest before slicing.
In a bowl, combine cooked rice, corn, diced red onion, and chopped cilantro.
In a separate bowl, mix together mayonnaise, sour cream, chili powder, garlic powder, cumin, lime juice, salt, and pepper to make the sauce.
To assemble the bowl, place a serving of rice mixture in a bowl, top with sliced chicken, and drizzle with the sauce.
Garnish with additional cilantro and a lime wedge. Enjoy!
